quick vegetable noodles
if you need a meal in a hurry, this recipe is from the ‘ways with noodles’ is just for you, it’s also a great way of keeping up with your required five veges a day
you need
- 100g flat egg noodles
- 1 tablespoon vegetable oil
- 2 chillies, deseeded and finely diced
- 2 garlic cloves, peeled and finely chopped
- 3cm piece of ginger root, peeled and grated
- 1 red onion, peeled and cut vertically into eights
- 100g runner beans, trimmed and sliced into 6cm lengths
- 1 red pepper, deseeded and sliced lengthways
- 1 tablespoon soy sauce
- 2 tablespoons sake
- 1 teaspoon soft brown sugar
- 1 tablespoon oyster sauce
instructions
cook the noodles according to the instructions on the packet, drain and refresh under cold water
heat oil in a hot wok and stir fry the chillies, garlic and ginger for 30 seconds. add the vegetables and continue to stir fry for 5-6 minutes or until wilted, adding 1 tablespoon water half way through
stir in the soy sauce, sake, sugar and oyster sauce along with the noodles. toss so that everything is well coated and heated through, and serve
